Egusi is a West African name for the seeds of plants like squash, melons, and gourds that, when dried and ground become a staple ingredient in many West African dishes. These seeds are rich in fat and protein, and add these essential nutrients into West African Cuisine. Our seafood Egusi soup features ground roasted melon seeds with our favorite vegetable of the month (spinach or sweet kale). Cooked into a fresh tomato, onions and sweet bell peppers vegetable stew base sauce. Shrimp, crabs, mussels and dry fish is simmered and flavored with crayfish in a broth along with some Mabins fresh herbs and African spices. It is loaded with heart healthy nutrients and vitamins.
