Plantains and Beans
Plantains and beans is one of the favorites amongst West African street foods. Based on which country you’re from in West Africa, this dish has several nicknames “red red”, “one pot beans”, “stewed beans porridge”… it’s really a filling protein of black-eyed beans cooked traditionally in a red palm oil, tomato, onions base stew, a variety of herbs and spices, and a little hint of sweetness from the sweet fried plantains. I decided to keep it vegan, but you can add our meat options to this delicious combo. You can also enjoy it with any bread of your choice.
