The inventors of jollof, also known as Thieboudienne translates as βrice and fishβ in Wolof language. Also known as the national dish of Senegal. Broken jasmine rice is cooked in a rich tomato broth flavored with fish, vegetables, and dried fish, giving it a rich umami taste. It is served with the rice spread at the bottom, topped with fish, lamb chops, and an assortment of chunky vegetables like yuca, carrots, okra, sweet bell peppers, cabbage, and squash cooked in the jollof sauce which is later used to cook the rice as well.
